Ingredients

  • 16 oz Sirloin steak (or any lean cut)
  • 2 large Russet potatoes
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 0.5 tsp Paprika
  • 2 tbsp Fresh parsley (optional, for garnish)
  • 1 tbsp Unsalted butter
  • 2 sprigs Fresh thyme (optional, for butter basting)
  • 2 Cloves of garlic (optional, for butter basting)

Directions

Step 1

Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Wash and peel the russet potatoes if desired. Slice them into evenly sized sticks, around 1/4 to 1/2 inch thick, for uniform cooking.

Step 3

In a large bowl, toss the potato sticks with 1 tablespoon of olive oil, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, garlic powder, and paprika. Mix well until the potatoes are well coated.

Step 4

Spread the potatoes in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping them halfway through, until they’re golden and crispy.

Step 5

While the fries are baking, pat the steak dry with paper towels and season both sides with the remaining 1/2 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 6

Heat a large, heavy-bottomed skillet (preferably cast iron) over medium-high heat. Add 1 tablespoon of olive oil and let it heat until shimmering.

Step 7

Place the steak in the skillet and sear for 3-4 minutes on each side for medium-rare, or longer depending on your desired doneness. Use a meat thermometer to ensure an internal temperature of 130°F (54°C) for medium-rare or 140°F (60°C) for medium.

Step 8

Optional: Add the unsalted butter, thyme sprigs, and garlic cloves to the skillet. Tilt the pan slightly and use a spoon to baste the steak with the flavored butter for extra richness and flavor.

Step 9

Remove the steak from the skillet and let it rest for 10 minutes to retain its juices.

Step 10

Once the fries are finished, sprinkle with fresh parsley if desired. Slice the steak against the grain and serve alongside the crispy fries. Serve immediately and enjoy this protein-packed meal!
