Ingredients

  • 500 grams Mutton (boneless, trimmed of excess fat)
  • 2 large Onions (thinly sliced)
  • 2 medium Tomatoes (finely chopped)
  • 1 tablespoon Ginger-Garlic Paste
  • 3 pieces Green Chilies (slit)
  • 2 tablespoons Cooking Oil
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Red Chili Powder
  • 0.5 teaspoon Turmeric Powder
  • 0.5 teaspoon Garam Masala
  • 0.5 teaspoon Black Pepper Powder
  • 1 teaspoon Salt
  • 10 pieces Curry Leaves
  • 2 tablespoons Fresh Coriander Leaves (chopped)
  • 1 cup Water
  • 1 slice Lemon (optional, for garnish)

Directions

Step 1

Clean the mutton thoroughly under cold running water and pat it dry using paper towels.

Step 2

In a pressure cooker, heat 1 tablespoon of cooking oil over medium heat. Add ginger-garlic paste and sauté for 1 minute until aromatic.

Step 3

Add the mutton pieces to the pressure cooker, along with turmeric powder and salt. Sauté for 5-6 minutes until the mutton is lightly seared.

Step 4

Pour in 1 cup of water, close the lid, and cook the mutton on medium heat for 5-6 whistles (or until tender). Once done, allow the pressure to release naturally.

Step 5

In a large frying pan, heat the remaining 1 tablespoon of oil over medium heat. Add curry leaves and green chilies, and let them crackle for a few seconds.

Step 6

Add sliced onions and sauté until golden brown. Then, stir in the chopped tomatoes and cook until they soften and break down into a thick paste.

Step 7

Sprinkle coriander powder, cumin powder, red chili powder, and black pepper powder into the onion-tomato mixture. Mix well and cook for another 2 minutes.

Step 8

Add the cooked mutton to the frying pan. Stir well to coat the mutton with the spicy mixture. Continue to cook on medium heat for 10-15 minutes, stirring occasionally, until the liquid reduces and the mutton is coated with the spices.

Step 9

Sprinkle garam masala over the fry and give it a final stir.

Step 10

Garnish the mutton fry with fresh coriander leaves and a squeeze of lemon juice, if desired.

Step 11

Serve hot with steamed rice, chapati, or naan for a delicious, protein-rich meal.
