Ingredients

  • 500 grams Ground mutton
  • 1 medium-sized, finely chopped Onion
  • 1 tablespoon Garlic paste
  • 1 tablespoon Ginger paste
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Turmeric powder
  • 2 tablespoons, chopped Fresh cilantro
  • 2 small, finely chopped Green chili
  • 1 teaspoon (adjust to taste) Salt
  • 1 large Egg
  • 2 tablespoons Gram flour (besan)
  • 2 tablespoons (for pan-frying) Oil

Directions

Step 1

In a large mixing bowl, combine the ground mutton, finely chopped onion, garlic paste, ginger paste, cumin powder, coriander powder, red chili powder, garam masala, turmeric powder, and salt.

Step 2

Add the chopped fresh cilantro and finely chopped green chilies to the mixture. Mix well to ensure even distribution of spices and herbs.

Step 3

Crack the egg into the bowl and add the gram flour (besan). Mix thoroughly with your hands until the mixture comes together and holds its shape. If it feels too wet, add a little more gram flour.

Step 4

Divide the mixture into 10-12 equal portions. Shape each portion into a flat patty or a cylindrical kebab, depending on your preference.

Step 5

Heat the oil in a non-stick pan over medium heat. Once hot, place the kebabs in the pan, leaving enough space between each to flip them easily.

Step 6

Cook the kebabs for 4-5 minutes on each side, or until they are golden brown and cooked through. Be careful not to overcrowd the pan; cook in batches if needed.

Step 7

Once cooked, transfer the kebabs to a plate lined with paper towels to remove excess oil.

Step 8

Serve hot with mint yogurt chutney, lemon wedges, or a fresh salad.
