Ingredients

  • 500 g Fresh squid
  • 1 large Egg white
  • 2 tbsp Cornstarch
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 2 stalks Spring onions
  • 1 tsp Sesame oil
  • 1 tsp Salt
  • 0.5 tsp White pepper
  • 2 tbsp Ice water
  • 2 cups Neutral oil for frying

Directions

Step 1

Clean the fresh squid thoroughly by removing the innards, skin, and cartilage. Rinse well and pat dry.

Step 2

Chop the squid into small pieces and transfer to a food processor.

Step 3

Add the egg white, cornstarch, garlic (minced), ginger (grated), sesame oil, salt, white pepper, and ice water to the food processor.

Pulse the mixture in the food processor until it forms a smooth paste. Scrape down the sides to ensure even blending.

Finely chop the spring onions and fold them into the mixture with a spatula.
