Ingredients

  • 2 cups High-protein flour
  • 1 cup Non-fat Greek yogurt
  • 1 large Egg
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Warm water
  • 2.25 teaspoons Active dry yeast
  • 1 tablespoon Honey
  • 0.5 cup Baking soda
  • 8 cups Water
  • 0 as needed Coarse salt

Directions

Step 1

In a large bowl, combine warm water, yeast, and honey. Stir until the yeast dissolves. Let it sit for 5 minutes until frothy.

Step 2

Add high-protein flour, Greek yogurt, beaten egg, baking powder, and salt to the yeast mixture. Mix until a dough forms.

Step 3

Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.

Step 4

Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rest for about 10 minutes.

Step 5

Meanwhile, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 6

In a large pot, bring 8 cups of water to a boil, then slowly add the baking soda to avoid it overflowing.

Step 7

Divide the resting dough into 6 equal pieces. Roll each piece into a rope about 1-inch thick, then cut each rope into 1-inch pieces to form pretzel bites.

Step 8

Working in batches, drop the pretzel bites into the boiling baking soda water for about 30 seconds. Use a slotted spoon to remove them and place them onto the prepared baking sheet.

Step 9

Sprinkle coarse salt over the pretzel bites while they are still wet from the baking soda bath.

Step 10

Bake in the preheated oven for 12-15 minutes or until golden brown.

Step 11

Remove from the oven and let them cool for a few minutes before serving. Enjoy your high-protein soft pretzel bites!
