Ingredients

  • 3 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 tablespoon sugar
  • 1 cup warm water
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter
  • 1 egg
  • 1 egg yolk
  • 1 pound lean turkey sausage
  • 1 medium, finely chopped onion
  • 2 cloves, minced garlic
  • 1 medium, diced red bell pepper
  • 1 cup, crumbled feta cheese
  • 1 tablespoon olive oil
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped parsley
  • 1 for brushing egg wash (1 egg + 1 tbsp milk, beaten)

Directions

Step 1

In a small bowl, dissolve 1 tablespoon of sugar in 1 cup of warm water. Sprinkle 1 packet of active dry yeast over the top and let it sit for about 5 minutes until frothy.

Step 2

In a large mixing bowl, combine 3 cups of all-purpose flour and 1 teaspoon of salt. Add 4 tablespoons of unsalted butter and rub into the flour until it resembles coarse crumbs.

Step 3

Create a well in the center of the flour mixture. Pour in the yeast mixture, 1 beaten egg, and 1 egg yolk. Mix well until a dough forms.

Step 4

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover with a clean towel, and let rise in a warm place for about 1 hour or until doubled in size.

Step 5

While the dough is rising, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, cooking until translucent.

Step 6

Add the turkey sausage to the skillet, breaking it up with a spoon. Cook until the sausage is browned and cooked through, about 8 minutes.

Step 7

Stir in the diced red bell pepper, crumbled feta cheese, black pepper, and chopped parsley. Cook for another 2-3 minutes. Remove from heat and let it cool.

Step 8

Punch down the risen dough and divide it into 12 equal pieces. Roll each piece into a ball and flatten it into a disc.

Step 9

Place about 2 tablespoons of the sausage filling in the center of each disc. Gather the edges to enclose the filling and pinch to seal tightly.

Step 10

Arrange the buns on a baking sheet lined with parchment paper, seam-side down. Cover with a towel and let rise for another 20 minutes.

Step 11

Preheat your oven to 375°F (190°C). Once the buns have risen, brush each one with the prepared egg wash.

Step 12

Bake the buns in the preheated oven for 20-25 minutes, or until golden brown.

Step 13

Let the buns cool slightly on a wire rack before serving. Enjoy your high-protein savory sausage buns warm or at room temperature.
