Ingredients

  • 500 grams Extra-lean ground beef
  • 4 pieces Whole wheat tortillas
  • 1 medium, diced Red onion
  • 2 minced Garlic cloves
  • 1 medium, sliced Red bell pepper
  • 100 grams Spinach leaves
  • 200 grams, halved Cherry tomatoes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 120 grams Low-fat Greek yogurt
  • 1 tablespoon Lemon juice

Directions

Step 1

Heat a large non-stick skillet over medium-high heat and add the olive oil.

Step 2

Once the oil is hot, add the diced red onion and minced garlic. Sauté for about 3 minutes until the onion starts to soften.

Step 3

Add the ground beef to the skillet and cook for about 7-10 minutes, stirring occasionally, until it is browned and cooked through. Drain any excess fat if necessary.

Step 4

Season the beef with salt and black pepper, and then add the sliced red bell pepper to the skillet. Cook for another 4-5 minutes until the bell pepper softens but retains a slight crunch.

Step 5

In a small bowl, mix the low-fat Greek yogurt and lemon juice to create a light tangy sauce. Set aside.

Step 6

Lay out the whole wheat tortillas on a clean surface. Spread a tablespoon of the yogurt sauce onto each tortilla.

Step 7

Arrange a handful of spinach leaves on each tortilla, followed by an equal portion of the cooked beef and vegetables.

Step 8

Top with halved cherry tomatoes, then wrap up the tortilla tightly by folding in the sides and rolling from the bottom.

Step 9

Once all wraps are assembled, slice each wrap in half and serve immediately.
