Ingredients

  • 200 grams Fresh raspberries
  • 250 grams Greek yogurt, plain and unsweetened
  • 30 grams Vanilla protein powder
  • 1 tablespoon Chia seeds
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Gelatin powder
  • 2 tablespoons Cold water

Directions

Step 1

In a small bowl, combine the gelatin powder with cold water and let it sit for about 5 minutes to bloom.

Step 2

Rinse the raspberries thoroughly and blend them in a food processor or blender until smooth. Pour the puree through a fine mesh sieve to remove the seeds, collecting the seedless puree in a bowl.

Step 3

In a medium bowl, mix the Greek yogurt and vanilla protein powder until well combined and smooth.

Step 4

Gently heat the raspberry puree in a small saucepan over low heat. Once slightly warm, stir in the bloomed gelatin until it completely dissolves.

Step 5

Remove the raspberry mixture from heat and let it cool to room temperature, about 10 minutes.

Step 6

Once cooled, fold the raspberry mixture into the yogurt-protein powder blend and mix until combined.

Step 7

Stir in the chia seeds, honey or maple syrup, and vanilla extract until evenly distributed.

Step 8

Divide the mousse mixture evenly among four serving glasses or bowls.

Step 9

Cover the servings with plastic wrap and refrigerate for at least 2 hours or until set.

Step 10

Before serving, you can optionally garnish the mousse with a few fresh raspberries or mint leaves.
