Ingredients

  • 2 cups Whole Wheat Flour
  • 1 cup Almond Flour
  • 1 cup Whey Protein Powder
  • 0.5 cup Cold Unsalted Butter
  • 0.5 cup Greek Yogurt
  • 0.25 cup Honey
  • 0.5 teaspoon Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 cup Raisins
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 3 tablespoons Milk

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine whole wheat flour, almond flour, whey protein powder, salt, baking powder, and cinnamon.

Step 3

Cut the cold unsalted butter into small cubes and add it to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, mix together Greek yogurt, honey, vanilla extract, and egg until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and stir gently until just combined.

Step 6

Fold in the raisins until they are evenly distributed throughout the dough.

Step 7

Lightly flour a clean surface and roll the dough to about 1/2 inch thickness. Cut the dough into desired shapes using a pastry cutter.

Step 8

Place the cut dough shapes onto the prepared baking sheet.

Step 9

Brush the tops of the pastries with milk for a nice glaze.

Step 10

Bake in the preheated oven for about 18-20 minutes, or until the edges are golden brown.

Step 11

Allow the pastries to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 12

Serve warm, and enjoy your high-protein raisin pastries!
