Ingredients

  • 500 grams Pork loin
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 large Garlic cloves
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 1 medium Red bell pepper
  • 1 inch piece Ginger
  • 1200 ml Chicken broth
  • 3 tablespoons Soy sauce
  • 200 grams Dried egg noodles
  • 100 grams Spinach
  • 3 pieces Scallions
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sesame oil

Directions

Step 1

Cut the pork loin into thin strips and set aside.

Step 2

Heat olive oil in a large pot over medium heat. Add the pork strips and sauté until browned on all sides, about 5 minutes. Remove the pork and place it on a plate.

Step 3

Chop the onion, mince the garlic cloves, and slice the carrots, celery, and red bell pepper.

Step 4

In the same pot, add the chopped onion and sauté for 3 minutes until translucent. Add the minced garlic, carrots, celery, red bell pepper, and grated ginger. Cook for an additional 5 minutes, stirring occasionally.
