Ingredients

  • 60 grams Vanilla protein powder
  • 240 grams All-purpose flour
  • 10 grams Baking powder
  • 2 grams Salt
  • 2 grams Ground nutmeg
  • 80 grams Unsalted butter
  • 100 grams Granulated sugar
  • 2 Large eggs
  • 5 milliliters Vanilla extract
  • 120 grams Greek yogurt
  • 60 milliliters Whole milk
  • 1000 milliliters Oil for frying

Directions

Step 1

In a medium bowl, whisk together the vanilla protein powder, all-purpose flour, baking powder, salt, and nutmeg.

Step 2

In a large bowl, cream together the unsalted butter and granulated sugar using a hand mixer until light and fluffy, about 3 minutes.

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

Fold in the Greek yogurt until the mixture is smooth and well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 6

Pour in the milk and gently stir until the dough is uniform.

Step 7

Cover the dough with plastic wrap and refrigerate for at least 1 hour to firm up.

Step 8

Heat oil in a deep fryer or large heavy-bottomed pot to 180°C (350°F).

Step 9

On a lightly floured surface, roll out the dough to about 1/2-inch thickness.

Step 10

Using a donut cutter, cut out the donuts and reserve the holes. Gather and roll out the scraps to make more donuts.

Step 11

Carefully drop the donuts into the hot oil, a few at a time, without overcrowding. Fry for 1-2 minutes on each side or until golden brown.

Step 12

Use a slotted spoon to remove the donuts from the oil and drain on paper towels.

Step 13

Serve warm or allow to cool and store in an airtight container for up to 2 days.
