Ingredients

  • 120 grams All-purpose flour
  • 30 grams Vanilla-flavored protein powder
  • 240 milliliters Milk
  • 2 pieces Large eggs
  • 15 grams Butter
  • 120 grams Nutella
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract
  • 1 as needed Cooking spray or more butter for the pan
  • 100 grams Fresh strawberries
  • 10 grams Powdered sugar

Directions

Step 1

Begin by melting the butter over low heat in a small saucepan or in the microwave. Set aside to cool slightly.

Step 2

In a large mixing bowl, sift together the all-purpose flour, protein powder, and a pinch of salt.

Step 3

In another bowl, whisk the eggs thoroughly, then add the milk slowly, followed by the vanilla extract and melted butter.

Step 4

Create a well in the dry ingredients, and gradually pour in the wet ingredients, whisking continuously to avoid lumps and form a smooth batter.

Step 5

Cover the bowl with plastic wrap and let the batter rest for about 15 minutes to allow the flour to hydrate.

Step 6

Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of butter.

Step 7

Pour about 60 ml (1/4 cup) of batter into the center of the pan, quickly tilting and swirling the pan to spread the batter evenly into a thin layer.

Step 8

Cook for about 1 to 2 minutes until the edges begin to crisp and lift from the pan, then flip using a spatula. Cook for another 1 minute on the other side until lightly golden.

Step 9

Transfer the cooked crepe to a plate and repeat with the remaining batter, stacking the crepes as you go.

Step 10

Spread a thin layer of Nutella over each crepe, then fold them into quarters or roll them up.

Step 11

Garnish with sliced fresh strawberries and a dusting of powdered sugar before serving. Enjoy your high-protein Nutella crepe!
