Ingredients

  • 6 large eggs
  • 3 large egg whites
  • 1 cup cottage cheese
  • 0.5 cup Greek yogurt
  • 2 cups mushrooms
  • 1 cup spinach
  • 0.5 cup onion
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 cup low-fat shredded cheddar cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon nutmeg
  • 1 whole wheat pie crust

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Clean and slice the mushrooms, and chop the onion finely. Mince the garlic cloves.

Step 3

Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3 minutes.

Step 4

Add the sliced mushrooms to the skillet and cook until they are soft and any liquid they release has evaporated, approximately 5 minutes.

Step 5

Stir in the spinach, allowing the leaves to wilt slightly. Remove the skillet from heat and set aside.

Step 6

In a large mixing bowl, whisk together the eggs, egg whites, cottage cheese, and Greek yogurt until smooth.

Step 7

Add the cooked mushroom and spinach mixture to the egg mixture, stirring gently to combine.

Step 8

Mix in the shredded cheddar cheese, salt, black pepper, and nutmeg.

Step 9

Place the whole wheat pie crust into a 9-inch (23 cm) pie dish, ensuring it is evenly spread and pressed down.

Step 10

Pour the egg and mushroom mixture into the prepared pie crust, smoothing the top with a spatula.

Step 11

Bake the quiche in the preheated oven for 35-40 minutes, or until the top is golden and the filling has set. A knife inserted into the center should come out clean.

Step 12

Remove the quiche from the oven and let it cool for at least 5 minutes before slicing and serving.
