  • 2.5 cups Water
  • 0 Banana leaves or aluminum foil for wrapping

Directions

Step 1

Start by soaking the dried black-eyed peas in water for about 30 minutes. This helps in softening the skins for easier peeling.

Step 2

Once soaked, peel off the skins by rubbing them between your palms. Rinse several times in clean water until most of the skins are removed.

While preparing the beans, boil the eggs until hard-boiled. Set aside to cool, then peel and cut into quarters.

In a blender, combine the peeled beans, red bell peppers, scotch bonnet, onion, and 2.5 cups of water. Blend until smooth and creamy.
