Ingredients

  • 240 ml unsweetened almond milk
  • 60 g vanilla protein powder
  • 2 large egg
  • 150 g Greek yogurt
  • 50 g honey
  • 150 g all-purpose flour
  • 10 g baking powder
  • 5 g baking soda
  • 10 g matcha powder
  • 2 g salt
  • 50 g coconut oil

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease an 8-inch cake pan with coconut oil or line it with parchment paper.

Step 2

In a large bowl, whisk together the all-purpose flour, vanilla protein powder, matcha powder, baking powder, baking soda, and salt. Set aside.

Step 3

In a separate bowl, whisk the eggs until they are light and frothy. Add the Greek yogurt, honey, and melted coconut oil, and whisk until well combined.

Step 4

Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk. Start and end with the dry ingredients. Mix until just combined, being careful not to over-mix.

Step 5

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 6

Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 7

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 8

Optionally, dust the top with a little extra matcha powder for decoration before serving.
