Step 4

Finely chop the onion and mince the garlic cloves.

Step 5

Slice the carrots and celery, and dice the red bell pepper.

Step 6

In the same pot, add the onion and garlic, sauté for 3 minutes until the onion becomes translucent.

Step 7

Add the carrots, celery, and red bell pepper to the pot and sauté for another 5 minutes until the vegetables are slightly softened.

Step 8

Add the diced tomatoes and chicken broth to the pot, stir to combine.

Step 9

Drain and rinse the kidney beans and white beans, then add them to the pot.

Step 10

Stir in the basil, oregano, thyme, salt, and black pepper.

Step 11

Return the sausage to the pot.

Step 12

Bring the stew to a boil, then reduce the heat to a simmer and cover the pot.

Step 13

Let the stew simmer for about 30 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.

Step 14

Before serving, stir in the fresh spinach and let it wilt for about 2 minutes.

Step 15

Garnish with fresh parsley before serving.
