Ingredients

  • 8 large egg whites
  • 2 large whole eggs
  • 60 grams whey protein powder (vanilla or unflavored)
  • 60 grams all-purpose flour
  • 240 milliliters milk (or almond milk)
  • 0.5 teaspoon salt
  • 30 grams unsalted butter
  • 1 teaspoon vanilla extract
  • 0 maple syrup or preferred topping (optional)
  • 0 fresh berries or fruit (optional)

Directions

Step 1

Preheat your oven to 425°F (220°C) and position the oven rack in the middle.

Step 2

In a large mixing bowl, whisk together the egg whites, whole eggs, and milk until well combined.

Step 3

Add the whey protein powder, all-purpose flour, and salt to the egg mixture. Whisk until the batter is smooth and there are no lumps.

Step 4

Add the vanilla extract and whisk again to incorporate.

Step 5

In a 10-inch ovenproof skillet, melt the butter over medium heat. Swirl the skillet to coat the sides as well.

Step 6

Once the butter is fully melted and slightly bubbling, pour the batter into the skillet.

Step 7

Immediately transfer the skillet to the preheated oven.

Step 8

Bake for 18-20 minutes or until the pancake is puffed and golden brown at the edges.

Step 9

Carefully remove the skillet from the oven. The pancake will deflate slightly as it cools.

Step 10

Slice the pancake into wedges and serve warm with maple syrup or your choice of toppings such as fresh berries or fruit.
