Ingredients

  • 30 g whey protein powder
  • 30 g cornstarch
  • 500 ml milk
  • 1 tsp vanilla extract
  • 4 large egg yolks
  • 60 ml honey
  • 2 sheets gelatin sheets
  • 8 sheets phyllo pastry sheets
  • 50 g butter
  • 50 ml water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Melt the butter and brush a sheet of phyllo pastry with it. Layer another sheet on top and brush with more butter. Repeat with all 8 sheets.

Place the layered sheets on the prepared baking tray and bake for approximately 10-15 minutes until golden and crispy. Once baked, let them cool completely.

Soak the gelatin sheets in cold water for about 5 minutes to soften.

In a medium saucepan, combine whey protein powder, cornstarch, and milk. Whisk until smooth and no lumps remain.

Add the vanilla extract and egg yolks to the saucepan and whisk until combined.

Add honey to the mixture and place over medium heat. Stir constantly until the mixture begins to thicken and comes to a gentle boil. Boil for 1-2 minutes, then remove from heat.
