Ingredients

  • 500 grams Cassava (yucca root)
  • 100 grams Chickpea flour
  • 150 ml Water
  • 4 large Egg whites
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 500 ml Vegetable oil
  • 1 whole Lemon wedges
  • 2 tablespoons Chopped parsley

Directions

Step 1

Peel the cassava and cut it into thick sticks, about 2-3 inches long and 1 inch thick.

Step 2

Boil a pot of water with 1 teaspoon of salt. Add the cassava pieces and let them cook for about 15 minutes or until they are tender but not falling apart. Drain well and let them cool.

In a large bowl, mix chickpea flour, garlic powder, paprika, 0.5 teaspoon of salt, and black pepper. Gradually whisk in water and egg whites until you have a smooth batter.

Heat vegetable oil in a deep frying pan or a deep fryer to 350°F (175°C).
