Ingredients

  • 500 grams Boneless, skinless white fish fillets (cod or haddock)
  • 240 grams Canned chickpeas, drained and rinsed
  • 2 large Eggs
  • 100 grams Panko breadcrumbs
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a food processor, add the white fish fillets and pulse a few times until finely chopped.

Step 3

Add the drained chickpeas to the food processor, and pulse until the mixture is combined but still has some texture.

Step 4

Transfer the fish and chickpea mixture to a large bowl.

Add the eggs, panko breadcrumbs, chopped onion, minced garlic, parsley, lemon zest, salt, and black pepper to the bowl. Mix well until all the ingredients are combined.
