Ingredients

  • 300 g whole wheat penne pasta
  • 250 g ricotta cheese
  • 50 g Parmesan cheese, grated
  • 200 g chicken breast, cooked and diced
  • 150 g Greek yogurt, plain
  • 100 g baby spinach, fresh
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup water

Directions

Step 1

Begin by cooking the whole wheat penne pasta according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.

Step 3

Add the cooked and diced chicken breast to the skillet, stirring occasionally until the chicken is warm.

Step 4

In a large bowl, mix ricotta cheese, Greek yogurt, and half of the grated Parmesan cheese together until smooth.

Step 5

Gradually add the water to the cheese mixture to reach a creamy consistency. Season with salt and black pepper.

Step 6

Add the baby spinach to the skillet with chicken and garlic, cooking until wilted.

Step 7

Reduce the heat to low and add the cooked pasta and cheese mixture to the skillet, stirring well to combine.

Step 8

Continue to cook on low heat for 3-5 minutes, allowing the flavors to merge and the sauce to thicken slightly.

Step 9

Serve hot, garnished with the remaining grated Parmesan cheese.
