Ingredients

  • 300 g dark chocolate (at least 70% cocoa)
  • 2 tbsp coconut oil
  • 60 g whey protein powder (chocolate flavor)
  • 100 g mini marshmallows
  • 150 g digestive biscuits
  • 100 g raw almonds
  • 75 g dried cranberries
  • 1 tsp vanilla extract
  • 0.5 tsp salt

Directions

Step 1

Line a 9-inch square baking tin with parchment paper, leaving some overhang on the sides for easy removal.

Step 2

In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave in 30-second intervals, stirring between each, until the mixture is fully melted and smooth. You can also use a double boiler if preferred.

Step 3

Once melted, stir in the chocolate whey protein powder until well combined and smooth. Add in the vanilla extract and salt, mixing thoroughly.

Roughly break the digestive biscuits into small pieces and add them to the chocolate mixture, along with the mini marshmallows, raw almonds, and dried cranberries.

Mix everything together until well coated with the chocolate mixture.
