Ingredients

  • 1 cup Whole wheat flour
  • 0.5 cup Chickpea flour (besan)
  • 0.25 cup Soya flour
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Carom seeds (ajwain)
  • 0.5 teaspoon Cumin seeds
  • 0 (as needed) Water
  • 1 tablespoon Oil (for dough)
  • 2 cups Oil (for deep frying)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, chickpea flour, soya flour, salt, carom seeds, and cumin seeds.

Step 2

Add 1 tablespoon of oil to the flour mixture and mix well until it resembles a coarse crumb.

Step 3

Gradually add water to the mixture, a little at a time, and knead to form a smooth and pliable dough. The dough should not be too soft or too firm.

Step 4

Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 5

Divide the dough into small lime-sized balls. Roll each ball between your hands to smoothen.

Step 6

Flatten each ball and roll it out with a rolling pin to form small discs, about 4 inches in diameter. Ensure the discs are even in thickness to puff properly.

Step 7

Heat oil for deep frying in a deep pan over medium heat. The oil should be hot but not smoking.

Step 8

Gently slide one puri into the hot oil, pressing slightly with a slotted spoon to help it puff up. Fry until the puri becomes golden brown and puffs up completely, about 30 seconds to 1 minute per side.

Step 9

Remove and place on a paper towel to drain excess oil.

Step 10

Serve hot with curried vegetables or chutney.
