  • 50 grams Chickpea flour
  • 7 grams Instant yeast
  • 300 ml Warm water
  • 60 ml Extra virgin olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 tablespoon Fresh rosemary
  • 1 teaspoon Coarse sea salt

Directions

Step 1

In a large bowl, combine the whole wheat flour, vital wheat gluten, chickpea flour, and instant yeast.

Step 2

In a separate bowl, mix the warm water, 30 ml of olive oil, honey, and salt until well combined.

Step 3

Make a well in the center of the dry ingredients and pour in the wet mixture. Stir until a rough dough forms.

Transfer the dough onto a lightly floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic.

Return the dough to a clean, lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise for about 1 hour or until doubled in size.
