Ingredients

  • 1 cup All-purpose flour
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 1 cup Milk
  • 1 cup Cottage cheese
  • 0.5 cup Greek yogurt
  • 0.25 cup Whey protein powder
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Honey
  • 2 tablespoons Butter
  • 1 tablespoon Vegetable oil
  • 1 tablespoon Protein powder (optional, for extra protein)

Directions

Step 1

In a mixing bowl, combine the flour and salt. Make a well in the center and add the eggs, milk, and 1 tablespoon of vegetable oil.

Step 2

Whisk the mixture until smooth and let it rest for 10 minutes.

Step 3

For the filling, mix the cottage cheese, Greek yogurt, whey protein powder, vanilla extract, and honey in a separate bowl. Blend until smooth for a creamy filling.

Step 4

Heat a non-stick skillet over medium heat and lightly grease with butter.

Step 5

Pour about 3 tablespoons of the batter into the skillet and tilt to spread the batter evenly, forming a thin layer.

Step 6

Cook for about 1-2 minutes until the underside is lightly golden. Flip and cook the other side for another 1 minute.

Step 7

Transfer the cooked crepe to a plate and keep it warm. Repeat this process until all the batter is used.

Step 8

Place about 2 tablespoons of the cheese filling into the center of each crepe. Fold the sides over the filling and roll up.

Step 9

Heat the remaining butter in the skillet over medium heat. Place the filled blintzes seam-side down in the pan.

Step 10

Cook the blintzes for about 2-3 minutes on each side until they are golden brown and heated through.

Step 11

Serve warm, drizzled with extra honey or your favorite topping, and enjoy these protein-packed delights!
