Ingredients

  • 150 grams Rolled oats
  • 50 grams Vanilla protein powder
  • 50 grams Almond flour
  • 20 grams Chia seeds
  • 50 grams Mixed nuts (almonds, walnuts, hazelnuts)
  • 30 grams Dried cranberries
  • 60 grams Honey
  • 50 grams Coconut oil
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a large bowl, combine the rolled oats, vanilla protein powder, almond flour, chia seeds, mixed nuts, dried cranberries, baking powder, and salt.

Step 3

In a small saucepan over low heat, melt the coconut oil and honey together, stirring until well combined.

Step 4

Remove from heat and let cool slightly. Add the vanilla extract and egg to the melted mixture, then whisk together until smooth.

Pour the wet ingredients into the dry ingredients and mix well until combined and a dough forms.
