Ingredients

  • 240 ml Warm almond milk
  • 7 g Active dry yeast
  • 50 g Coconut sugar
  • 250 g All-purpose flour
  • 50 g Vital wheat gluten
  • 50 g Vanilla protein powder
  • 2 tsp Ground cardamom
  • 1 tsp Salt
  • 60 ml Olive oil or melted coconut oil
  • 1 Egg
  • 60 g Unsalted butter, softened
  • 75 g Brown sugar
  • 1 Egg for wash
  • 1 tsp Additional ground cardamom for topping

Directions

Step 1

In a large mixing bowl, combine the warm almond milk and yeast. Let it sit for about 5 minutes until it becomes frothy.

Step 2

Add coconut sugar, flour, vital wheat gluten, vanilla protein powder, 1 tsp ground cardamom, and salt to the yeast mixture. Stir until the dough begins to form.

Step 3

Incorporate the olive oil or melted coconut oil, and the egg into the dough. Knead by hand or using a dough hook in a stand mixer for about 6-8 minutes until smooth and elastic.

Step 4

Place the dough in a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5

Prepare the filling by mixing the softened butter, brown sugar, and an additional 1 tsp of cardamom together in a small bowl until smooth.

Once risen, punch down the dough and turn it out onto a lightly floured surface. Roll it into a rectangle about 30 x 40 cm (12 x 16 inches).

Preheat your oven to 180°C (350°F).

Beat the remaining egg and lightly brush over the tops of the buns. Sprinkle with additional ground cardamom.

Bake the buns in the preheated oven for 18-20 minutes or until golden brown and cooked through.
