Ingredients

  • 400 g chickpeas, canned, drained and rinsed
  • 400 g white kidney beans, canned, drained and rinsed
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 100 g rolled oats
  • 60 g nutritional yeast
  • 30 g ground flaxseed
  • 45 ml water
  • 30 g parsley, chopped
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 150 g whole wheat breadcrumbs

Directions

Step 1

In a small bowl, combine ground flaxseed and water to create a flax egg. Set aside for 5 minutes to thicken.

Step 2

In a food processor, add chickpeas and white kidney beans, and pulse until roughly mashed.

Step 3

Add the chopped onion, minced garlic, oats, nutritional yeast, parsley, smoked paprika, cumin, salt, black pepper, and the prepared flax egg to the food processor. Pulse until all ingredients are well combined but still a bit chunky.

Step 4

Transfer the mixture to a bowl and refrigerate for 10 minutes to firm up.

Step 5

Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 6

Divide the mixture into 12 equal parts and shape each portion into patties.

Step 7

Place the whole wheat breadcrumbs in a shallow dish. Coat each patty on both sides with breadcrumbs.

Step 8

Heat olive oil in a large pan over medium heat. Cook the patties for 2-3 minutes on each side until golden brown.

Step 9

Transfer the patties to the prepared baking sheet and bake in the preheated oven for 10 minutes, until they are firm and cooked through.
