Ingredients

  • 2 scoops Whey protein powder
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.25 cup Granulated sugar
  • 0.5 teaspoon Salt
  • 1 Large egg
  • 1 cup Unsweetened almond milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter, melted
  • 2 Egg yolks
  • 2 tablespoons Cornstarch
  • 1 scoop Vanilla flavored protein powder
  • 0.5 cup Semi-sweet chocolate chips
  • 0.25 cup Heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray.

Step 2

In a large bowl, whisk together whey protein powder, flour, baking powder, sugar, and salt.

Step 3

In a separate bowl, beat the egg, then add the almond milk, vanilla extract, and melted butter, mixing until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

Step 5

Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full.

Step 6

Bake for 10-12 minutes or until a toothpick inserted comes out clean. Let donuts cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Step 7

To make the protein custard filling, beat the egg yolks and cornstarch in a medium saucepan until smooth.

Step 8

Gradually whisk in 1 1/4 cups of almond milk and cook over medium heat, stirring constantly until the mixture thickens and begins to bubble. Remove from heat.

Step 9

Stir in vanilla-flavored protein powder until smooth and let the custard cool completely.

Step 10

To fill the donuts, use a small knife to make a cut in the side of each donut. Gently pipe the protein custard into the center using a piping bag.

Step 11

For the chocolate glaze, heat the heavy cream until simmering and pour it over the chocolate chips in a heat-proof bowl.

Step 12

Let it stand for a minute, then stir until smooth and glossy.

Step 13

Dip the top of each filled donut into the chocolate glaze and let the glaze set before serving.
