Ingredients

  • 2 cups all-purpose flour
  • 1 scoop vanilla protein powder
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 cup unsalted butter, melted
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1.5 cups fresh blueberries
  • 0.5 cup rolled oats
  • 2 tablespoons chia seeds

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.

Step 2

In a large bowl, sift together the all-purpose flour, vanilla protein powder, baking powder, and salt. Set aside.

Step 3

In a separate medium bowl, whisk together the melted butter and granulated sugar until well combined.

Step 4

Add the eggs, one at a time, to the butter and sugar mixture, beating well after each addition.

Step 5

Stir in the vanilla extract and milk until the mixture is smooth.

Step 6

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Step 7

Gently fold in the fresh blueberries, rolled oats, and chia seeds until evenly distributed throughout the batter.

Step 8

Divide the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 9

Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a bun comes out clean.

Step 10

Let the blueberry buns cool in the muffin tin for about 5 minutes, then transfer to a wire rack to cool completely before serving.
