Ingredients

  • 2 medium beetroots
  • 400 grams (canned, drained and rinsed) chickpeas
  • 60 grams protein powder (plant-based or whey)
  • 50 grams almond flour
  • 100 grams rolled oats
  • 60 ml maple syrup
  • 50 grams (melted) coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 1 pinch pinch of salt

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a 9x9 inch baking tray with baking paper.

Step 2

Peel and grate the beetroots. Set aside.

Step 3

In a food processor, add the drained chickpeas and blend until smooth.

Step 4

Add the grated beetroots, protein powder, almond flour, rolled oats, maple syrup, melted coconut oil, vanilla extract, baking powder, cinnamon, and a pinch of salt to the processed chickpeas. Blend until you obtain a smooth and uniform mixture.

Step 5

Transfer the mixture to the prepared baking tray and spread it evenly with a spatula.

Bake in the preheated oven for about 25-30 minutes or until the edges start to pull away from the sides of the tray and a toothpick inserted into the center comes out clean.
