  • 14.5 ounces canned diced tomatoes
  • 2 cups beef broth
  • 0.5 cup dried apricots, chopped
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 3 medium carrots, peeled and chopped
  • 2 medium sweet potatoes, peeled and cubed
  • 0.5 cup almonds, toasted and chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.

Add the beef cubes in batches and brown them on all sides. Remove the beef and set it aside.
