Ingredients

  • 2 cups Rolled oats
  • 0.75 cup Dried apricots
  • 0.5 cup Almonds
  • 0.5 cup Sunflower seeds
  • 0.25 cup Flaxseeds
  • 2 tablespoons Chia seeds
  • 0.5 cup Protein powder
  • 0.5 cup Honey
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Baking soda
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan or line with mini muffin paper liners.

Step 2

In a food processor, combine dried apricots and almonds, and pulse until they're finely chopped but not powdered.

Step 3

In a large mixing bowl, combine the rolled oats, finely chopped apricots and almonds, sunflower seeds, flaxseeds, chia seeds, and protein powder.

Step 4

In a small saucepan over low heat, combine the honey, unsweetened applesauce, coconut oil, and vanilla extract. Stir until the coconut oil is melted and the mixture is smooth.

Step 5

Pour the warm liquid mixture over the dry ingredients in the large mixing bowl. Add baking soda and salt. Stir the mixture until all ingredients are well combined.

Step 6

Scoop the batter into the prepared mini muffin pan, filling each cup about 3/4 full. Press the mixture down gently to form solid bites.
