Ingredients

  • 250 grams all-purpose flour
  • 200 grams unsalted butter
  • 50 grams whey protein powder (unflavored)
  • 5 grams salt
  • 30 grams sugar
  • 120 ml milk
  • 7 grams dry yeast
  • 1 egg
  • 1 apple (medium-sized, peeled, cored, and chopped)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 egg wash (1 egg beaten with 1 tablespoon of water)

Directions

Step 1

In a small bowl, combine the warm milk and sugar, then sprinkle the dry yeast over the top. Let it sit for about 5 minutes until it becomes frothy.

In a large mixing bowl, combine flour, whey protein powder, and salt. Add the milk and yeast mixture, along with one beaten egg. Mix until a dough is formed.

Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a bowl, cover it with plastic wrap, and let it rise for about 1.5 hours until doubled in size.

Once the dough has risen, punch it down and place it back on the floured surface. Roll it into a rectangle roughly 1 cm thick.

Place the chilled butter between two sheets of parchment paper and roll it out into a rectangular shape that covers 2/3 of the dough. Place the butter on the dough, leaving a margin at the edges.

During the last chill, prepare the apple filling. In a small saucepan over medium heat, add the chopped apple, ground cinnamon, vanilla extract, and honey. Cook until apples are softened, about 5-7 minutes. Set aside to let cool.

After the final chilling, roll the dough into a large rectangle and cut into 8 triangles.

Place a spoonful of the apple filling on the base of each triangle, gently roll toward the peak, forming a croissant shape.

Place the croissants on a baking sheet lined with parchment paper. Cover and let them proof for about 1 hour until slightly puffy.
