Ingredients

  • 1.5 cups Wheat bran
  • 1 cup Boiling water
  • 1 cup All-purpose flour
  • 0.5 cup Whole wheat flour
  • 2 teaspoons Baking soda
  • 0.5 teaspoon Salt
  • 0.75 cup Brown sugar
  • 0.25 cup Molasses
  • 1 cup Buttermilk
  • 2 large Eggs
  • 0.25 cup Vegetable oil
  • 0.75 cup Raisins
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

In a medium mixing bowl, combine the wheat bran and boiling water. Stir well and let sit for 5 minutes to soften the bran.

In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt.
