Ingredients

  • 12 sheets Lasagna noodles
  • 1 lb Ground beef
  • 0.5 lb Italian sausage
  • 2 tbsp Olive oil
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 1 medium, diced Zucchini
  • 1 medium, peeled and diced Carrot
  • 2 cups Spinach
  • 28 oz can Crushed tomatoes
  • 6 oz can Tomato paste
  • 2 tsp Dried Italian seasoning
  • 1 tsp Sugar
  • 15 oz container Ricotta cheese
  • 1 large Egg
  • 1.5 cups, grated Parmesan cheese
  • 2 cups, shredded Mozzarella cheese
  • 1 tsp Salt
  • 1 tsp Black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions until al dente. Drain and lay flat on a clean surface to prevent sticking.

Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, and cook until softened and fragrant, about 3 minutes.

Add the ground beef and Italian sausage to the skillet. Cook, breaking up the meat with a wooden spoon, until browned, about 7-8 minutes. Drain any excess fat.

Stir in the zucchini, carrot, and spinach into the skillet. Cook until the vegetables are softened, about 5 minutes.
