Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • 2 cloves minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup chicken stock
  • 0.5 cup heavy cream
  • 2 tablespoons fresh parsley

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them on both sides with paprika, salt, and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When hot, add the chicken thighs skin-side down and sear for 6-7 minutes until the skin is golden and crispy. Flip and cook for another 4 minutes on the other side. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, stir in the minced garlic, rosemary, and thyme. Cook for 1 minute until fragrant.

Pour in the chicken stock and use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the stock simmer for 2-3 minutes.

Stir in the heavy cream and return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the chicken and simmer uncovered for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
