Ingredients

  • 250 g all-purpose flour
  • 2 tsp baking powder
  • 0.25 tsp salt
  • 125 g unsalted butter, chilled and cubed
  • 60 g granulated sugar
  • 2 egg yolks
  • 2 tbsp cold water
  • 200 g apricot jam
  • 2 egg whites
  • 100 g granulated sugar for meringue
  • 100 g desiccated coconut

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 12-cup muffin tin or line with paper cases.

Step 2

In a large mixing bowl, combine the flour, baking powder, and salt.

Step 3

Using your fingertips or a pastry cutter, rub the cubed butter into the dry ingredients until the mixture resembles fine breadcrumbs.

Stir in the granulated sugar and mix well.

Add the egg yolks and cold water, then mix until a firm dough forms. Wrap the dough in plastic wrap and chill in the refrigerator for 15 minutes.
