Ingredients

  • 3 lbs heritage pork roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 cloves garlic cloves, minced
  • 1 onion, diced
  • 4 carrots, peeled and cut into chunks
  • 1.5 lbs baby potatoes
  • 2 sprigs rosemary, fresh sprigs
  • 3 sprigs thyme, fresh sprigs
  • 1 cup chicken or vegetable broth
  • 0.5 cup red wine (optional)
  • 1 tbsp Worcestershire sauce

Directions

Step 1

Pat the pork roast dry with paper towels and season it generously with salt and black pepper on all sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the pork roast on all sides until golden brown, about 2-3 minutes per side. Remove from the skillet and set aside.
