  • 2 lbs Yukon Gold potatoes
  • 2 tsp Salt
  • 0.25 cup Fresh parsley, chopped

Directions

Step 1

Wash and scrub 2 lbs of Yukon Gold potatoes. Cut them into bite-sized pieces, leaving the skin on for added texture and nutrients.

Place the potato pieces in a large pot and cover with cold water. Add 2 tsp of salt to the water.
