Directions

Step 1

Scrub and peel (if desired) the russet potatoes. Dice them into 1/2-inch cubes for even cooking.

Place the diced potatoes into a pot of cold, salted water. Bring to a boil over medium-high heat and cook for 5 minutes until the potatoes are just tender but not fully cooked. Drain and pat dry with a clean kitchen towel.
