Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Whole wheat flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking powder
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Dried thyme
  • 2 tablespoons Grated Parmesan cheese (optional)
  • 0.25 cups Olive oil
  • 0.5 cups Cold water
  • 1 teaspoon Sea salt flakes (for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, baking powder, dried rosemary, dried thyme, and Parmesan cheese if using.

Add the olive oil and mix until the dough starts to form coarse crumbs.

Gradually add the cold water, a few tablespoons at a time, mixing as you go until the dough comes together into a smooth ball. You may not need all the water.

Divide the dough into two portions to make it easier to work with.

On a lightly floured surface, roll out one portion of the dough as thinly as possible, ideally about 1/16 inch thick, to achieve crispy crackers.
