  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 2 whole Lemon
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the Cornish hens under cold water and pat them dry with paper towels.

Step 3

In a small bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, parsley, salt, and black pepper to form an herb mixture.

Rub the herb mixture generously over the hens, ensuring you coat both the outside and under the skin for maximum flavor.

Cut the lemons in half. Squeeze the juice from one lemon over the hens, then place half a lemon inside the cavity of each hen.
