  • 4 pieces (boneless, skinless) Chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon (freshly ground) Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons (unsalted) Butter
  • 2 cloves (minced) Garlic
  • 2 teaspoons (chopped) Fresh thyme
  • 1 teaspoon (chopped) Fresh rosemary
  • 2 cups Seedless red grapes
  • 1 cup (dry) White wine
  • 1 cup Chicken broth
  • 1 tablespoon Heavy cream
  • 2 tablespoons (fresh, chopped) Parsley

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and sear them for 4-5 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Lower the heat to medium-low, add the butter to the skillet, and let it melt. Stir in the minced garlic, chopped thyme, and rosemary, cooking for 1 minute until fragrant.

Add the grapes to the skillet and cook for 2-3 minutes, stirring occasionally, until they begin to soften and release their juices.
