Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 1 medium Red bell pepper
  • 1 medium Yellow onion
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1 tablespoon Lemon juice

Directions

Step 1

Remove the outer leaves of the cabbage, cut it into quarters, and remove the core. Shred the cabbage into thin strips.

Step 2

Peel the carrots and cut them into thin matchsticks, or grate them using a box grater.

Step 3

Dice the red bell pepper into small pieces and finely chop the yellow onion.

Step 4

Mince the garlic cloves and set aside.

Step 5

Heat a large skillet or wok over medium heat, then add the olive oil.

Once the oil is hot, add the onion and sauté for 2-3 minutes, until translucent.

Add the garlic and cook for another 30 seconds until fragrant.
