Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 medium zucchini, diced
  • 3 cloves garlic cloves, minced
  • 2 tablespoons tomato paste
  • 14.5 ounces canned diced tomatoes
  • 1 cup beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 medium russet potatoes, peeled and thinly sliced
  • 1.5 cups shredded cheddar cheese
  • 2 tablespoons butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat and set aside.

Step 3

In the same skillet, sauté the diced onion, carrots, and zucchini until tender, about 5 minutes.

Step 4

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Stir in the tomato paste, canned diced tomatoes (with liquid), beef broth, dried basil, dried oregano, salt, and black pepper. Bring to a simmer and let cook for 5 minutes.

Step 6

Return the cooked ground beef to the skillet and stir well to combine with the sauce and vegetables.

Step 7

Spread half of the sliced potatoes evenly on the bottom of the greased casserole dish.

Step 8

Pour the beef and veggie mixture over the potato layer, spreading evenly.

Step 9

Top with the remaining potato slices and brush them lightly with melted butter.

Step 10

Cover the casserole dish with aluminum foil and bake for 35 minutes.

Step 11

Remove the foil, sprinkle shredded cheddar cheese evenly over the top, and return to the oven. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 12

Sprinkle the casserole with freshly chopped parsley before serving.

Step 13

Let the casserole rest for 5-10 minutes before serving to allow the layers to set.
