Ingredients

  • 1 cup Brown lentils
  • 1 cup White or brown rice
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 4 cups Vegetable broth or water
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 4 servings Lemon wedges

Directions

Step 1

Rinse the lentils and rice under cold water until the water runs clear. Set aside.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and cook for about 5 minutes, stirring occasionally, until it becomes soft and translucent.

Add the minced garlic, ground cumin, dried thyme, paprika, salt, and black pepper to the pot. Stir and cook for 1-2 minutes until fragrant.
