Ingredients

  • 2 pieces (10-12 oz each) Ribeye steak
  • 3 tablespoons Olive oil
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme
  • 4 cloves Garlic
  • 1 tablespoon Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Unsalted butter
  • 0.5 teaspoon (optional) Lemon zest

Directions

Step 1

Remove the ribeye steaks from the refrigerator and allow them to come to room temperature for about 30 minutes to ensure even cooking.

Step 2

While the steaks are coming to room temperature, prepare the herb mixture. Finely chop the rosemary and thyme leaves, mince the garlic cloves, and combine them in a small bowl.

Step 3

Rub the steaks on both sides with olive oil, then season generously with kosher salt and freshly ground black pepper.

Step 4

Sprinkle the herb mixture evenly over both sides of the steaks, pressing gently to help the herbs adhere to the meat. Optionally, add a pinch of lemon zest for a bright note.

Step 5

Preheat your grill to high heat (around 450-500°F). If using a charcoal grill, wait until the coals are white-hot and ashy.

Step 6

Brush the grill grates with oil to prevent sticking.

Step 7

Place the steaks on the hot grill. Sear them undisturbed for 4-5 minutes on the first side to develop a good crust.

Step 8

Flip the steaks and grill for another 3-5 minutes on the second side for medium-rare (internal temperature of 130°F). Adjust cook time based on your desired doneness.

Step 9

During the last 2 minutes of grilling, top each steak with a pat of unsalted butter to enhance the flavor and juiciness.

Step 10

Remove the steaks from the grill and transfer them to a clean plate or cutting board. Let them rest for 5-10 minutes, loosely tented with foil, to allow the juices to redistribute.

Step 11

Slice the steaks against the grain for maximum tenderness. Serve immediately and enjoy your herb-grilled steak!
