Ingredients

  • 4 pieces bone-in pork chops
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme leaves
  • 4 pieces garlic cloves
  • 2 tablespoons lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons unsalted butter

Directions

Step 1

Pat the pork chops dry with a paper towel and set aside.

Step 2

In a small bowl, mix together 2 tablespoons of olive oil, fresh rosemary, thyme, minced garlic (2 cloves), lemon juice, paprika, salt, and black pepper.

Step 3

Rub the herb and garlic mixture all over the pork chops on both sides. Let them marinate for at least 10 minutes or up to 2 hours in the refrigerator for extra flavor.

Step 4

Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil.

Step 5

Once the oil is hot, sear the pork chops for 3-4 minutes on each side, until they develop a golden-brown crust. Avoid overcrowding the pan; cook in batches if necessary.

Step 6

Lower the heat to medium, add the unsalted butter and the remaining 2 cloves of smashed garlic to the pan.

Step 7

Spoon the melted butter over the pork chops while they finish cooking, about 2-4 more minutes, or until the internal temperature reaches 145°F (63°C).

Step 8

Remove the pork chops from the skillet and let them rest for 5 minutes before serving.

Step 9

Garnish with additional fresh herbs if desired, and serve with your favorite sides like mashed potatoes or roasted vegetables.
