Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh cilantro
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh thyme
  • 2 cloves garlic
  • 1 teaspoon lemon zest

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Step 2

Heat the olive oil in a medium-sized saucepan over medium heat.

Step 3

Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 4

Add the rice and salt to the pan, stirring well to coat the rice grains with the oil and garlic. Cook for about 2 minutes, stirring frequently.

Step 5

Pour the water into the pan and increase the heat to high. Bring to a boil.

Step 6

Once the water reaches a boil, reduce the heat to low, cover the saucepan with a tightly fitting lid, and simmer for 15 minutes without lifting the lid.

Step 7

While the rice is cooking, finely chop the fresh parsley, cilantro, basil, and thyme, and zest the lemon.

Step 8

After 15 minutes, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to finish steaming.

Step 9

Fluff the rice gently with a fork, then add the chopped herbs and lemon zest, mixing them gently into the rice until well incorporated.

Step 10

Serve the herb-infused rice warm as a fragrant and flavorful side dish.
